How to Treat Constipation With Watercress

Constipation is when bowel movements become infrequent, which leads to abdominal bloating and discomfort. Common causes of constipation include lack of fiber in the diet, not enough fluids in the diet, and lack of physical activity. Hemorrhoids and anal cracks and tears can result from straining due to constipation. Watercress is a dark leafy green with numerous medicinal properties, including being a blood cleanser, a diuretic and a constipation reliever. Incorporating watercress into your diet via soups and salads will help alleviate constipation due to the plant's cleansing properties.

Things You'll Need

  • Measuring spoons
  • 2 tbsps. vegetable oil
  • 1 potato, peeled and cubed
  • 1 onion, chopped
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. salt
  • 1 1/2 pounds watercress, stems removed
  • 2 1/2 cups chicken stock
  • 1 1/2 cups milk
  • 1/4 cup whipped heavy cream, if desired
  • 1/2 watercress leaves for garnish

  • Blender or food processor

Instructions

  1. Watercress Soup

      Measure two tbsps. of vegetable oil and pour into a saucepan over medium high heat. Add one peeled and cubed potato and one chopped onion, and stir to coat them in oil. Season to taste with salt and pepper, then reduce heat to medium and cover. Heat for five minutes.

      Add 2 1/2 cups of chicken stock and 1 1/2 cups of milk to the pan. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

      Add the watercress to the pan and stir uncovered for four to five minutes.

      Pour soup into a blender or food processor and blend till smooth. Pour soup back into saucepan and season to taste. Add whipped cream to individual portions of soup, if desired. Add watercress leaves as garnish if desired. Serve. Refrigerate any leftovers.
