Snacking can be an important part of maintaining a healthful diet. It keeps metabolism working consistently and helps curb the appetite to avoid overeating at meals. Pairing a small amount of fruit with cheese can satisfy cravings for sweets and provide protein without overloading on carbs. Have a few slices of apple with cheddar or brie, or try a pear with muenster.
Peanut butter and hummus also provide protein but tend to be high in fat. Try either with veggies such as celery and carrots, or spread peanut butter over toast with raisins or a few slices of banana.

Most low-carb diets tend to contain a lot of meat. Fish is a particularly good option for diabetics, as it tends to have less fat than poultry or red meat. Salmon is always a good choice, especially in the summer. Try sauteing it with lemon and olive oil, and serve with asparagus and a small amount of rice or mashed potatoes. Chicken provides many possibilities, but it is important to grill or bake it, rather than frying. Grill a few chicken breasts, and serve over spinach with strawberries and goat cheese for a light but filling meal.
Avocado, corn and guacamole can be used to make side dishes or toppings. Make a salsa with corn, tomatoes and avocado, and spread it over grilled chicken breasts and serve with a side salad.
