Once the food is mechanically broken down, chemical digestion takes over. Enzymes secreted by the salivary glands, stomach, pancreas, and small intestine begin to break down the complex molecules of food into simpler ones. Amylase breaks down carbohydrates, protease breaks down proteins, and lipase breaks down fats. These enzymes break down the food molecules into smaller and smaller components until they are small enough to be absorbed by the body.
