Hydrolysis of starch takes place in the small intestine. The salivary amylase enzyme present in saliva initiates the hydrolysis of starch in the mouth, but it is the pancreatic amylase enzyme secreted by the pancreas that is responsible for the majority of starch digestion in the small intestine. Pancreatic amylase hydrolyzes starch into smaller molecules, such as dextrins and maltose. These smaller molecules are further broken down by enzymes called dextrinases and maltase, respectively, into glucose, which can be absorbed and used as energy by the body. Therefore, the hydrolysis of starch occurs primarily in the small intestine, with contributions from both salivary amylase and pancreatic amylase.
