6 eggs
1 cup frozen corn

2 tbsp. oil (canola)
1 cup cherry tomatoes halved
1/4 cup sliced onion
1 tsp. basilPre-mix your eggs and the basil. Use the few extra seconds of heating the pan to make sure the eggs are well whipped into a consistent color.
Over medium heat, in the canola oil, saute the corn, onion and pepper strips to the level of carmelization (browning) you prefer (usually around 3 minutes).
Add the tomatoes to the other sauteed vegetables when the onions are at least translucent. Stir constantly.
Add the egg-basil mix to the vegetables. Stir the vegetables slightly to ensure that the egg mix properly surrounds them.
Add cheese on top and brown under a broiler to finish this dish.
Cocoa
