Sweet Potato Nutrition

Sweet potatoes are tubers or root vegetables that grow in warm climates, such as the southern United States and Latin America. As a complex carbohydrate rich in a number of nutrients, sweet potatoes are commonly recommended for a healthy, well-balanced diet.
  1. Vitamins A, C, E, and K

    • Sweet potatoes are extremely high in Vitamins A and C with one cup of the vegetable providing 769 percent and 65 percent of a person's daily nutritional requirement, respectively. 1 cup of sweet potatoes also provides 7 percent of daily requirements for Vitamin E and 6 percent for Vitamin K.

    Other Vitamins

    • Sweet potatoes contain many other vitamins including thiamin, niacin, riboflavin, B6 and folate.

    Minerals

    • 1 cups of sweet potatoes delivers half of the daily requirement of manganese as well as a number of other minerals, such as calcium, iron, magnesium, phosphorous, potassium, sodium, zinc, copper and selenium.

    Fiber

    • Sweet potatoes are a good source of dietary fiber, with 1 cup providing 6.6 grams or 26 percent of the daily nutritional requirement.

    Other Considerations

    • Sweet potatoes are cholesterol-free and contain very little fat. They also contain Omega-3 and Omega-6 fatty acids.
