Cured meats, such as deli meats and jerky, contain a relatively high level of nitrates. This is due to the fact that most meats are cured with sodium nitrate in order to keep them fresh. To avoid the high level of nitrates in cured meats, only purchase meats that are fresh and relatively low in sodium content.
Preservatives

Aside from its use in cured meats, sodium nitrate is commonly used in other preserved foods. This especially includes jarred and pickled foods, as these generally contain a high level of sodium to obtain a long shelf-life. Common preserved foods that are high in nitrates include pickles and other jarred vegetables, as well as canned meat.
Vegetables

Nitrates are naturally found in many vegetables that absorb nitrates from the soil. Thus, the vegetables that contain the highest nitrate content are dirt-grown vegetables, such as onions and potatoes. Generally, the nitrate content of vegetables is low when compared to cured meats and other preserved foods.

Always check the sodium content of the food you purchase, listed under the nutrition facts. Foods that are high in sodium content are likely to be high in nitrates. Aside from the high nitrate content, excessive levels of sodium can lead to other health problems, such as increased blood pressure and heart complications.
