Lemon juice contains water, citric acid, phosphoric acid, melic acid, citral, citronellol, pectin, hesperidin, d-limonene, sesquiterpene and phellandrene.
Acidity

The pH of lemon juice varies between two and three, making it an acid base. Lemon juice contains about 5 to 6 percent citric acid. The acid in lemon juice is corrosive.
Vitamins and Minerals

Vitamin C, vitamin A, folate, choline, vitamin E, B6 and B1, thiamin, niacin and pantothenic acid can be found in lemon juice. It also contains a large amount of potassium, smaller amounts of calcium, magnesium, phosphorus, and sodium and trace amounts of copper, iron, manganese, zinc and selenium.
Nutritional Properties

The juice from one lemon contains about 12 calories and four total carbohydrates. There is almost no measurable fat or protein in lemon juice.
