Physical Properties of Lemon Juice

Lemon juice is inexpensive and can be located in almost any grocery store in the United States. It's made up of many components, most of them beneficial. Lemon juice even has mild anti-inflammatory and antioxidant properties. Lemon juice has been recommended to treat everything from kidney stones to bad breath.
  1. Chemical Composition

    • Lemon juice contains water, citric acid, phosphoric acid, melic acid, citral, citronellol, pectin, hesperidin, d-limonene, sesquiterpene and phellandrene.

    Acidity

    • The pH of lemon juice varies between two and three, making it an acid base. Lemon juice contains about 5 to 6 percent citric acid. The acid in lemon juice is corrosive.

    Vitamins and Minerals

    • Vitamin C, vitamin A, folate, choline, vitamin E, B6 and B1, thiamin, niacin and pantothenic acid can be found in lemon juice. It also contains a large amount of potassium, smaller amounts of calcium, magnesium, phosphorus, and sodium and trace amounts of copper, iron, manganese, zinc and selenium.

    Nutritional Properties

    • The juice from one lemon contains about 12 calories and four total carbohydrates. There is almost no measurable fat or protein in lemon juice.
