List of Low-Carb Veggies
When you think about cutting your carbohydrate intake, you might immediately think about reducing your consumption of high-sugar snacks, white bread, pasta, white rice and processed salty snacks such as crackers. But some vegetables are high in carbohydrates, including potatoes and corn. However, there are plenty of vegetables that are low in carbohydrates.-
Leafy Greens
-
Leafy greens such as kale, cabbage, spinach, bok choy and collard greens are examples of low-carb vegetables. There are various ways you can prepare these vegetables. For example, you can fix a pot of collard greens and serve them with turkey bacon pieces instead of salt pork or sausage. And if you like spinach, you can make a spinach salad with citrus fruit and a balsamic vinaigrette.
Flower Vegetables
-
These types of vegetables include artichokes, cauliflower and Brussels sprouts. Instead of fixing baked cauliflower with tons of heavy cream, butter and cheddar cheese, make a cauliflower-chicken soup with some leafy greens and tomatoes as well as herbs. If you enjoy Brussels sprouts, roast them in the oven and season them with lemon-pepper, thyme and salt.
Avocados and Olives
-
According to FitnessTipsforLife.com, avocados and olives are also good choices if you're looking for low-carb vegetables. Although avocados are often used for guacamole, put slices of it on a grilled turkey burger with ciabatta bread and a creamy dressing. As for olives, take some black olives and put them in your favorite vegetable salad.
