Instant Banana Soft Serve

In your food processor, combine three very ripe frozen bananas with a dash or two of ground cinnamon and allow the motor to run until the bananas are smooth and creamy and a soft ice cream results. If necessary, add a splash of unsweetened rice milk, almond milk, or soy milk to achieve the correct consistency.
Strawberries and Sugar-Free Creme

Ingredients:
Fresh strawberries
1 pint whipping cream
Artificial sweetener to taste
1 tsp vanilla extractDirections:
Pour cream into a chilled bowl and beat. Once cream starts to thicken, add artificial sweetener and vanilla. Continue to beat until stiff and fluffy. Serve with fresh strawberries.
Chocoate Peanut Butter Pudding

Ingredients:
12-ounce package of refrigerated silken tofu
1/4 cup unsweetened cocoa powder
3 tbsp smooth peanut butter
Artificial sweetener to taste
sugar-free chocolate syrupDirections:
In a blender or food processor, combine tofu, cocoa, peanut butter and artificial sweetener and mix until smooth and creamy. Scoop into individual serving bowls and drizzle with chocolate syrup before serving.
Pumpkin Pie Pudding

Ingredients:
1 package sugar-free vanilla pudding mix
1 1/2 cups unsweetened soy milk or skim milk
1 cup canned pure pumpkin
1 tablespoon pumpkin pie spiceDirections:
Mix all ingredients and serve chilled.
Jam Turnovers

Ingredients:
8 phyllo dough sheets, thawed
1/2 cup sugar-free jam of choice
Oil-spray such as PamDirections:
Preheat oven to 350 degrees Fahrenheit. Spray each phyllo dough with oil and cut into six squares. Spoon jam into each square's center and fold over to make a triangle. Repeat with all dough. Place triangles one inch apart and spray with oil. Bake 10 minutes or until golden brown.
