Purchase the freshest potatoes available from a grocery store or farmer's market. Fresh potatoes contain more nutrients than potatoes that have been sitting at the store for a week. Look for potatoes that are not shriveled or growing white sprouts. The potatoes should have firm, brown skin. If any of the potatoes are green, do not buy them.

Put the potatoes into a blender or food processor to liquefy them into juice. You may peel off the skins if desired, although they contain many nutrients and vitamins. The juice can be kept for several days, but you may enjoy it more if it is fresh.

Add a sweetener or other juice to the potato juice if you do not like its bland taste. Honey can be added, as well as lemon or carrot juice.
