Instructions

    • 1

Place a single cake layer on the serving platter. This cake layer should measure a standard 9 inches across and must be round. Place the other cake layer of the same size and shape on a sheet of waxed paper next to the platter.

    • 2

Shave off approximately 3 inches of cake from the layer on the waxed paper. Do this evenly all the way around the cake. This makes a slightly smaller round layer.

    • 3

Layer the top of the cake layer on the serving platter with about 1/2 inch of frosting in a flavor and color of your choice. Place the smaller cake layer directly on top of the first, centering it. This is designed to look a bit like the raised crown of a Mother's hat. The bottom layer is the brim.

    • 4

Chop the lb. of fondant in half. Roll out one of the halves into a thin sheet of fondant measuring 1/16-inch thick. You can select either buttercream fondant, which is rather stiff and bitter tasting; or you can choose marshmallow fondant which is more pliable and tastes like marshmallow creme or Turkish delight candy.

    • 5

Spread a thin layer of frosting over the entire surface of your tiered cake creation. 1/2 inch of frosting is adequate. Place the thin fondant sheet over the tiered cake, centering it.

    • 6

Use your fingers to form the fondant around the edges of the cake, making creases where necessary. Scallop the outer edges with your fingers by wrinkling the edges. This creates a hat design over the cake.
