How to Change Deep Fryer Grease

When cooking foods in a deep fryer it is imperative that you filter and change the oil regularly to keep the fryer operational and your oil uncontaminated. With heavily used fryers you must filter the oil daily to prolong the life of the oil. However, even with regular filtering the oil must eventually be changed. Draining, cleaning and adding new oil to your deep fryer may seem daunting, but it is really a simple and straightforward process.

  • Oil collection container
  • Waste disposal unit
  • Scraper
  • Dish detergent
  • Bucket
  • Vinegar
  • Drying cloth
  • Cooking oil

Instructions

      Turn the fryer off and unplug the unit from its electrical source. Allow it to cool completely.

      Position the oil collection container beneath the fryer drain valve. Open the drain valve and let the oil drain into your collection container. Close the drain valve and pour the used oil into the waste disposal tank.

      Use the scraper to remove residue, sediment, crumbs and oil deposits from the sides and bottom of the fryer. Deposit all of the scrapings into the trash.

      Fill the fryer vat with hot, soapy water. Plug the unit in and turn it on. Bring the water to a boil for five minutes. Turn the unit off and unplug it. Let the water cool to a safe handling temperature. Open the drain valve and let the water drain into a bucket. Discard the water.

      Place the bucket underneath the drain valve. Rinse the fryer with clear water and 1/2 cup of vinegar. Close the drain valve and dry the fryer with a drying cloth. Discard the rinse water.

      Put fresh cooking oil into the fryer and plug the unit it. Turn the fryer on and heat the oil to the desired cooking temperature.
