Food Safety Cleaning of a Milkshake Machine

Regular Cleaning Procedure

The regular cleaning procedure includes rinsing the machine with warm water, scrubbing all moving parts, rinsing with a soap-free detergent solution and rinsing again with warm water. Disassemble and scrub all parts of the machine with a soap-free detergent solution before rinsing again with warm water for two minutes.
Sanitizer Use

Thoroughly rinse the machine with sanitizer solution after cleaning. The sanitizer must rinse through five minutes before you resume use of the machine. The solution should meet federal guidelines for food safety as well as any more-specific local guidelines.
Improper Cleaning

If the machine has been cleaned improperly, it will develop a white scum known as "milkstone" around the interior walls. Composed of milk protein and minerals, milkstone harbors bacteria. Be sure that you have scrubbed off all of the milkstone to prevent a high bacterial count in the milkshake machine.
