Every coffee shop should undergo regular deep cleanings---ideally, they should happen once a week or once a month since coffee can stain various surfaces of a coffee shop, including equipment, floors and tables. Working frequently with hot milk also increases the changes of bacteria growth, and every utensil, carafe and piece of equipment that comes into direct contact with dairy products, whether hot or cold, needs to be sanitized and deep cleaned for health and safety reasons. Coffee Urn Cleaner

Buy professional-grade coffee urn cleaner to deep clean your espresso machine and coffee pots. Coffee urn cleaner can be run through the coffee maker at full strength to eliminate coffee grime and buildup on the sides of the pot. Put the urn cleaner in the coffee pot and let it set for 15 minutes before washing and scrubbing the inside of the pot. Use the coffee urn cleaner to backwash the espresso machine at least once a week. The urn cleaner will help maintain the water pressure of an espresso machine by removing buildup in the pipes.
Bleach and Water

Bleach mixed with water is one of the most effective ways to deep clean utensils and other equipment used in making espresso based beverages. After washing the utensils in hot soapy water, soak them in the bleach and water solution for a minimum of 15 seconds (create the solution by using 2 tablespoons of bleach for every gallon of water). Allow the utensils and equipment to air dry. This method will effectively kill bacteria or viruses that can potentially develop with the use of dairy products.
Vinegar

Vinegar can be used to clean any stainless steel appliances used in your coffee shop. Vinegar will effectively eliminate grime or oily buildup on your equipment. It will also restore the natural luster and shine to all of your stainless steel and glass equipment. Undiluted vinegar can be applied to surfaces with paper towels. Use it in coffee urns, the exterior of an espresso machine and other equipment such as blenders.
